Hay is placed under a white tablecloth to symbolize the nativity scene where Jesus was born on hay. By tradition the Christmas Eve dinner begins once the first star is visible in the sky - signifying the star of Bethlehem. Family members begin sharing their wafers, wishing each other blessings for the coming year.
